Our talented bar manager, Denis has been hard at work crafting a delightful selection of new spring signature cocktails! These refreshing libations are bursting with the vibrant flavors of the season and showcase distillers in the Charleston area. He also uses as much fresh and local produce as he can to craft cocktails that are a true reflection of the city's rich flavors. Come experience one (or two) for yourself – Denis can't wait to serve them to you!


Denis also hosts the 'Shaking With The Seasons' experience where you can learn first hand about spirits and ingredients to create your own beautiful cocktails at home!

TRUFFLE TOAST
The Truffle Toast is a luxurious symphony of textures and flavors. Our crispy brioche is slathered with creamy whipped Neufchatel cheese and adorned with the earthy aroma of shaved black truffles. A silky leek puree adds a touch of sweetness, while glistening Paddlefish caviar delivers a burst of briny elegance. This beautiful and decadent first course sets the stage for an unforgettable culinary journey on the Ashley Tasting Menu.

Q: Do you know what a new dish tastes like in your mind before you make it?
A: Yes, to a certain extent.  It's not always a complete picture, but I often have a strong idea of the flavor profile I'm aiming for before I start cooking. Experience plays a big role, similar to how a painter understands how colors will interact on a canvas. By working with different ingredients enough, you develop an intuition for how flavors will combine. This "internal library" of tastes lets me predict what might be missing or how to achieve a specific balance in a new dish. It's not necessarily the way every chef works, but it's a process that has been successful for us!
Executive Chef Marc Collins has been at the helm since 2001.
