Meet the Sommelier!

In a world where wine captivates the sophisticated, many seek a wise and passionate expert. Enter John Riddick, a dapper young man who pursued knowledge from global experts. He journeyed to Napa Valley, working among its steep mountains and strong vines, studying the color, taste, and aroma of wines aged to perfection. His passion led him to rigorous tests, proving his worth in teaching the mysteries of fine wine.

Many traveled far to sit at his table, drink the wines he poured, and hear his wisdom. Guests left with a renewed appreciation for wine, vowing to always respect a glass of red, white, and rosé. Now, John has returned to share his secrets with all who wish to learn!

John Riddick holds the Certified Sommelier diploma from the Court of Master Sommeliers and an Advanced Certificate from the Wine and Spirits Education Trust and has worked in every facet of the wine business over the last 20 years!

Q:  Was there one dish in particular on the menu that was the hardest to bring to life? 
A: While the overall concept for each dish is pre-visualized with its flavor profile in mind, there can be nuances in execution that require further refinement. Fortunately, with years of experience, I can rely on a well-developed internal library of flavors. This allows us to move swiftly from conception to execution, making minor adjustments as needed to achieve the desired outcome. While some technical aspects may require additional research and development to achieve the precise presentation or texture envisioned, the core essence of the dish and its flavor profile are established beforehand.
Executive Chef Marc Collins has been at the helm since 2001.
